Beef Tenderloin Medallions with Oven Roasted Shitake Mushroom Sauce Recipe

4-4oz. Filet Mignon
2TBSP Olive Oil
¼ cup Red Wine
½ cup Beef Broth
1 TBSP butter
1 clove Garlic, chopped
1each Shallot, chopped
4 each Oven Roasted Shitake Mushrooms
Salt and Pepper to taste
Directions:
1) In a hot sauté pan, melt butter and sauté the garlic, shallot and Morel Mushrooms. (Set aside)
2) Heat oil in another sauté pan. Season filet mignons with salt and pepper and place in pan. Sear both sides of the filet until desired doneness and remove from pan. (Keep warm)
3) Deglaze the pan with red wine (to get the entire beef flavor) and then add the beef broth.
4) Bring broth to a simmer and add the sautéed garlic, shallots and Shitake.
5) Taste and adjust seasoning.
6) Serve and enjoy.
