Marinated Flat Iron Steak with Charred Tomato Salsa Recipe

- 2 tbsp Olive Oil
- 2 cloves Garlic - mashed
- 1 tsp Chopped Italian parsley
- 1 tsp Chopped rosemary
- 1/2 cup Red Wine
- 1/2 tsp Dry mustard
- Kosher Salt and Pepper
- 4 ea Flat Iron Steaks – 8oz each
1. Place the first six ingredients together in a mixing bowl and mix well. Place the steaks in a 9x13 pan and pour the marinade over, turning to cover the whole steak. Place in cooler for about an hour turning once after 30 minutes.
2. Place steaks on grill at medium heat and leave for about 5 minutes, turn and leave on for only 4-5 minutes longer. Temperature will be at a medium-rare doneness.
Charred Tomato Salsa
- 10 ea Roma tomatoes – cored and halved
- ½ med Yellow Onion – small dice
- 1 bunch Cilantro – chopped
- 1 ea Jalapeno – chopped
- 3 ea Garlic cloves –chopped
- Olive Oil
- Kosher Salt and Pepper
1. Toss the halved tomatoes w/olive oil in a bowl and place on baking pan and in the oven at 400 degrees for about 20 minutes or until the tomatoes are starting to get slightly black. When done and cool, rough cut the tomatoes and place into a mixing bowl with onion, cilantro, jalapeno and garlic. Mix well and add about 2 teaspoon of oil and season with salt and pepper. Spoon over the steaks generously.
