KENTUCKY STYLE KERSHAW
Peel and cut Kershaw in small cubes. Cover with hot water and a pinch of salt. Cook until tender enough to stick with a straw. Drain off water. Put a layer in 9 inch pan or casserole.
Cover with 1 cup sugar and 3 tablespoons melted butter. Add another layer of cooked Kershaw to fill pan. Cover with 1 cup sugar and 3 tablespoons melted butter. Bake in oven at 375 degrees for about 20 minutes.
Kershaw or cushaw is a cross of pumpkin and winter squash. It is usually green and white striped and can grow almost 2 – 3 feet long. Most of the good “meat” is in the long neck of the Kershaw.
